We have seen animal ghosts. We saw a ghost cat chasing a ghost mouse or something of that sort, I don't remember where. The reason animals don't stick around as long as humans do is because they don't have a strong sense of self. Bug ghosts vanish or are eaten by spirits immediately which is why there aren't a ton everwhere.
