How do her powers work? Like when she ganked Captain America's abilities, how come he didn't get old if the people she touches loses their abilities?

Psionics of a very specific nature where she instinctively absorbs memories and power sets of those she touches. The psychic probing is too much to bear and causes (usually) temporary unconsciousness sometimes accompanied by the subject turning off their abilities (although for example touching Nightcrawler does not turn him pink and hairless with four fingers).
It doesn't really matter, does it? It's like asking how a magic spell works. There's no explanation for it that makes sense, so its easier to just suspend your disbelief.
