Where does all that mass come from so she can stretch in general? Does her strength diminish or increase as she gets farther? How does she know how durable she is?

She's rubber, just has lots of control over her body's shape. At no point in the movie does she actually canonically gain mass (she may have gained some mass in scenes because it looked better 'on camera', visuals come before autistic consistency), stretching makes her stretched parts slimmer.

Elasticity works partially based on rubber since whenever they stop stretching or shapeshifting it just reverts their body to normal. Think of it like taking a deep breath then finally exhaling. I'm sure if she relaxes her body completely she'd be putty or at least loose but her default will always be her normal human state. Which is why when she got stuck in the doors her lower half shot back to her upper half when the doors opened.

I've thought about this. It probably would consist of three modes of practice: Physical, Timing and Muscle memory. In theory, stretching would be similar to real life where gymnasts train their body by stretching little by little but stop right before it hurts so their body learns but doesn't suffer and not want to stretch that far anymore. So exercising should increase the distance an elastic hero should go. There's also tightening as opposed to stretching, similar to a basketball which would increase buoyancy.
Timing is based on speed and mass, similar to a ball and paddle. The ball is hit and shoots based on the force given, but the string stops it at a certain distance causing it to come back and repeat. The method would be to throw a punch then stop/or stiffen it at a certain distance so the kinetic force is transferred in proportion. The further the punch the more force would be needed at the start.
Muscle memory would be learning where to shoot your limbs and how far it should go without coming up short or going too far without thinking. Quite frankly, stretching is a very thought and math based super power and in the wrong hands it would be useless for heroics so studying and knowing instinctively what to do should be a very important lesson to learn.

I really like how the movie didn't take time or give a shit about the origins of their super power, but instead they addressed their internal conflicts of fitting in with society. This is why I love The Incredibles so goddamn much, it eatablished the real world problem, but from super family's point of view.
