Give it a couple of episodes and see how you feel. People usually say watch up to 12 before passing judgement, but if the overall aesthetic and tone rub you the wrong way you don't have to force yourself beyond 6 or so. It does eventually hit some pretty great drama, plot and lore, but it all heavily rests on the early world-building, so don't try to watch only the 'good' scenes or force yourself to reach the point in the show where 'things start happening'.

It's certainly not terrible. If you're in need of a decent show to watch and you're able to make it past around 25 episodes of character establishing filler, then you should test the waters.
If you don't like what you find once the show picks up then you'll probably waste your time continuing to watch it: once the show finds its feet it stays fairly consistent in it's storytelling.
Still, the show's not for everyone, so if you think it's trash, it won't get any better.

there seem to be two white diamonds. A fake one (cubic zirconia) and a real one, and I can't tell which one we've seen

Well, option one is that that gem isn't even White Diamond, just someone close/important to her, just as the other gems in the pyramid mural don't seem to be Yellow or Blue Diamond.
But for option two, assuming the mural is depicting the Diamonds, the crew changed their designs since then, and Pyramid Gem is White, the explanation could be either she's been replaced like you were suggesting,
or, the pyramid was something actually more modern, which would explain why Rose hadn't dealt with it prior despite it sitting in a very prominent location and Pearl being surprised by its presence.
There's a bit of a wrench with the thought that the Pyramid is more modern though: Matt confirmed it was a corrupted gem. Then again, I just checked my link to the tweet and it's apparently gone so who knows.

I mean it's pretty clear that it's not required for fusion, look at the rubies. I think the more "into it" the gems are, the stronger the resulting fusion becomes.
Could be why fusing with Garnet creates a gem so insanely strong, not only are three gems involved but there's also the love between Sapphire and Ruby and the sexuality between Garnet and Amethyst/Pearl.

If his first gem fusion is intentional, it's going to be either Garnet (for her general skill at it and Steven's idolization of her considering how she was in Chille Tid)
or with Peridot, with them both breaking through that barrier of fusion together.
If his first gem fusion happens unintentionally like it did with Connie, however, it's going to be Amethyst. They'll be wrapped up with partying or enjoying themselves and it'll just happen, likely with the fusion refusing to unfuse afterwards cause it/amethyst missed the feeling of being with Rose.
The last one is most likely going to be Pearl, cause that's the one that's going to have the biggest impact for both characters.
