The "marvel movies have too many quips" thing is mostly a meme. Except for Age of Ultron. Oh my god Whedon what the fuck were you doing. I'm not even exaggerating when almost every 3 lines of dialogue contain some kind of joke or sarcasm. I didn't mind Ultron having a warped sense of humor but seriously?

Back when the first Iron Man was filming, they didn't have a script. Just a story.
And to remedy that, much (if not most) of the film was ad libbed/improvised. And RDJ contributed what has become the now Marvel's trademark quip/humor heavy style.
And since audiences responded so well then, and still do (especially since EVERY character does it), Marvel has no reason to stop. But as a result, their film product is stagnant.

We had a genuinely respected figure in stage and film direct Thor, and even he couldn't salvage it.
Iron Man 3 was great but some people can't get behind the whole "Lethal Weapon/Kiss Kiss Bang Bang" vibe that comes with Shane Black. I seriously can't wrap my head around the fact that there are people who believe Iron Man 2 was better.

It's Disney's fault. They want all of these movies to be a certain way so people with individual styles like Edgar Wright or Jon Favreau end up not wanting to work them. Hell them ruining Ultron is why Whedon ended up quitting.
Now they have a literal yes man (Peyton Reed), a nu-male beta (Ryan Coogler), a decently funny guy getting handed an awful script (Taika Waititi), generic shaky-cam action directors (Russo bros), a horror director with a really bad track record (Scott Derrickson), and guy who made some cult films and already fits in the general aesthetic of these movies so he doesnt have much to complain about (James Gunn)
