Ahsoka, besides Obi-Wan, is probably the only Jedi left alive that can match Vader. For one thing, she was her apprentice, and another... There aren't many force wielders left who have had tenple training. Kanan was a padawan when Order 66 happened, he's making it up as he goes.
Vader hasn't had a real match in probably years. This was a wake up call for him.

He did(Filoni) say this about it, take it as what you will.

Dave Filoni on the Ahsoka/Vader fight and what we didn't see.

I just think it’s too compelling and too interesting, and while it might not be something for Ezra’s story, or Kanan’s, it would be interesting down the line if I got to show everybody what happens once that temple closes. I think what we’ve created is an interesting point in Star Wars history and time, and time will tell if we ever actually get to see that. I do believe that Vader – and why he’s fighting her at the end, which was important – is that he wants to destroy her. So she’s really kind of stuck. And perhaps even in that moment herself thinks, “Well maybe this is the end for me.” We’ll have to wait and see.
So is Season 3 gonna have an appearance by Obi-Wan because the Ghost is tracking Maul to Tattoine and when Maul feels Luke's presence they are finally going to have their final duel?

Their process is to investigate jedi sightings, since there will be shitloads of reports, but only a few attached to genuine threats.
Most will be barely trained or self trained people like Ezra, a few will be padawans that escaped, like kanan, and once in a blue moon you'll get someone like Kenobi.
When the former two happen, they're competent enough to kill it on their own or with friends.
When the latter happens, their job is to die and let Vader know that something worth his time has cropped up.
Will we ever see Ahsoka again, or is this the end of her story?

There is a long history in the Star Wars universe dating back far before Rebels. It would make sense for them to reference earlier Sith Lords and Jedi Masters during Ezra's training. Being a Jedi isn't all about using a lightsaber and throwing shit around with the force. It's a religious order with a rich history, and the study of history is important -- lest we commit the same mistakes that our ancestors have.
Then again, with all of the "poetry" in Star Wars, I don't think anyone actually learns from the mistakes of their ancestors in this series. Maybe the Jedi were just shit at studying history.

To me, it highlights the difference between the Jedi and the Sith. Anakin wants the power so badly and Palpatine hints that Plagueis was on the path but isn't clear if he actually accomplished it. It certainly doesn't appear to be something he ever actually taught Vader given Vader's encounter with Obi in ANH. The movies suggest that it is not the Sith but the Jedi that can actually accomplish such a feat, despite Sidious' claims.
