Rick And Morty is literally the best cartoon of the last 20 years (assuming season 3 is as good as the first two).
They both did different things to me, I guess.
In terms of comedy, Rick and Morty were more fun throughout, but Gravity Falls had me actually laugh out loud on occasion, something I rarely do.
They are both very creative, often in a similar grotesque way, though a tad toned down in Gravity Falls. I'd say GF is more pleasent to look at visually.
I like the characters in both shows. Storng familial bonds throughout, sprinkled with constant bickering, which is quite normal.
But Gravity Falls got me more on an emotional level, the ending hit me harder, which is partially because it really was the end and not just a season finale.
Hm, my gut tells me that Gravity Fall wins, but not by much. Also maybe because it can be appriciated by a wider variety of people.

Gravity Falls pulled a Twin Peaks and took a massive nosedive after the reveal of a big mystery in the middle of the second season
So far, Rick and Morty has stayed solidly above-average for an entire 2 seasons, so I'd say it takes the edge. Both are the best animated shit on TV today though either way.

I don't really mind seeing more Beth and Jerry episodes since Beth was lacking development in the first season. Plus their B plots are sometimes more entertaining than the main plot like in Transdimensional Cable 2 and Big Trouble in Little Sanchez
Gravity Falls biggest problem was that it was ambitiously trying to tell a big continuous story, yet at the same time, had too many standalone episodes. Alongside not really developing certain characters that really could've used some development, such as Wendy (literally none of the episodes where she has a big role were in her perspective, nor where they about herself, but rather something else, like dipper's crush on her).

Yeah. The episodes "Big Trouble In Little Sanchez" and "Look Who's Purging Now" while not the best, are a bit underrated IMO. And "Get Schwifty", while weak, did have some funny moments.
On the flipside, "Total Rickall" and "The Ricks Must Be Crazy" are favourites of mine.

Gravity Falls is much much more kid oriented. There are still some good episodes what I can see, but I stopped watching after the fishing episode. I just couldn't stomach (even ironically) how shitty those kids were.

Kids show, pretty funny, characters were alright, pleasant to look at. Didn't watch too much of the episodes (a few months ago), but it hinted to the characters that something big was happening but everyone in town seems too retarded to notice, making it frustrating for a show that seems to be taking itself so serious.
Both are good in some ways and suck in other ways. Depends on your tastes but neither is perfect.

It depends on how it's handled, there's nothing that says being meta carries a mature rating with it or something. I can see Rick being annoyed at how toned down he has to be, like this sneaking suspicion that lets him know something pretty different is going on. Maybe even try to get him and Morty back to their less than PG rating.
Rick and Morty had a strong first season and slightly lesser second season.
Gravity Falls had a bit of a mixed bag first season that had a few really fun episodes, some mediocrity, and didn't flesh out certain characters enough. It's second season started strong before it crumpled itself into a ball of piss poor writing and failed to utilize most of its core cast.
