The "separation will remove the immediate family romantic attachment block" theory is just a theory and hasn't been proven to be constant, and even in cases where it's been observed it's not about "the years during which the sexual development happens", it's about the years during which you form emotional bonds with your family members i.e. very very very early infancy, it'd have to be so early you don't consider them your sibling because there wasn't enough interaction or you were removed from their presence before you considered them a member of your immediate family.
By the time they were separated, Elsa was already 8 and Anna 5. They had formed a very, very strong sibling bond, as the movie makes clear, so strong a sibling bond that even at age 18 Anna gets nearly teary-eyed just reminiscing about how fucking close they were when she was 5. They also weren't truly separated, since Anna spent such a long time thinking about Elsa, her sister, trying to lure her out to play. Seeing how Elsa was outside her room in a couple of shots and also in the book A Frozen Heart indicates that it's not like they didn't see each other in over a decade, they just didn't interact. Elsa on her part acted like the responsible caretaker older sister and kept very strongly acting in that role throughout the movie, so she also sees Anna as the little sister she, the older sibling and head of the family, would have a duty to protect.

I would be happy if, in the sequel, Elsa meets a cute girl and opens up even more. It doesn't have to be overtly romantic, and I highly doubt Disney would make Elsa obviously gay, but keeping male love interests out of the picture and introducing more female main characters would allow people to dream without Disney taking the hit for having a gay character.

If it wasn't a Disney princess film, maybe. We haven't seen anything of Elsa's sexual preferences since she's mainly been convinced that her touch is lethal and she's a danger, and stressing out about giving Anna the best birthday ever out of guilt for her having had a shit childhood because Elsa was such a freak the parents had to shut the gates.
She hasn't had the time to relax.
However, realistically I think she's too profitable and too high-profile to be Disney's first positively portrayed gay human character ever. The problem is that by the time Frozen II rolls around, it's too late and too risky to suddenly out her as gay after parents have for years believed the princess their preschooler daughter is idolizing and pretending to be is straight.
I'm sure that all the gay positivity recently and even the popularity of elsanna will lead to Disney having a gay character sooner than anticipated. But the first one won't be in a princess in a romantic musical directed at little kids - it might be a side character in a movie like Zootopia, where the themes and jokes are more mature to begin with, and they don't hope to sell glittery dresses to children dressing up as the character in question. It def won't be their most profitable character in recent memory.
