Amethyst was meant to be purple, like actual amethyst gemstones.
If by "black" you didn't mean the color but the dindu-nuffin' kind of black, as in which race she would be if she was human, that's up to the viewers to interpret for themselves. I've always interpreted Garnet as black, and Amethyst as some kind of Latina, but whatever floats yer boat, bruv.

The gratuitous Spanish, the "fiesty" personality and her dancing are vaguely consistent with hispanic stereotypes, probably to communicate that she might be a latina. I understand that loanwords are a thing, yes she is a gem alien, but this is a cartoon. Aliens can be visually designed like earth human races because why not?
