It's just a lazy way to write a two-dimensional villain and half the time psychopathy isn't even portrayed correctly. The vast majority of psychopaths are sex-obsessed drug addicts who just wander around like mindless vagabonds exploiting people for money and maybe committing the occasional rape. They aren't particularly intelligent, they aren't strategic masterminds (though they may fancy themselves such), and they don't have any real beliefs or values (i.e., their "opinions" are completely fucking dull, uninteresting, and almost universally used as a manipulation mechanism).

It's kind of an overplayed visual at this point. It's the go-to visual for any kind of angry/crazy Supes now. I'd like to see something else now and then. I'd love to see some visual parallels to Darkseid when he gets mad - cold expression, highly visible gritted teeth, more imposing physical movement. Or alternately, don't see him at all - Superman's speed is nearly on par with the Flash. If you ever seriously pissed the man off, you might not ever see more than a blue and red blur smacking you through walls and cars.

Not that big. Whenever Supes goes bugfuck or dictator in the comics, red eyes are usually pretty prominent. Superboy, too - the shaved head, embracing his Luthor DNA Connor Kent? Red eyes constantly. Superboy Prime? Tons of shots of him with the toasty oculars. Not so much when Supergirl goes bad, but I think there's a bit of an unconscious bias against depicting women in Western comics at "pitiless psychopath" level, so I'm not surprised there.
