Did they ever release any interesting making-of or behind-the-scenes kind of stuff about this movie? They did have an art book, but it seems to have been a lot more sparse than most other books of its kind.

There's a lot of very simple drawings taking up a whole page, when their earlier books had a lot more stuff crammed in and a bunch of creators' notes about the characters or the plot. The book also seems kind of unorganised and random; other art books tend to categorize/group the art more.
I'm somewhat curious about some of the creative choices around the movie. Like Joy's blue hair and that glow; whether they were at some point supposed to play into the plot. Or Bing Bong's character. Before the movie was released, I remember people speculating he was gonna be a surprise reveal villain in a similar manner as some other Disney/Pixar movies have done recently. When he was first seen stealing some memories and showing this desire to be remembered by Riley again, that seemed like they could've foreshadowed him planning to mess with those core memories. So I was wondering if there were ever any plans to do so, or if they were trying to pull a "bet you thought he was gonna be another Stinky Pete or Lotso, but you were oh-so-wrong".

No, she can only feel and do things built up from joy (boredom, annoyance, pride, surprise, curiousity, mania, etc) since she's the fountain of it in Riley's mind.
However, joy also has a certain affinity for sadness in special because it is the south pole to her north pole, she doesn't have the same affinity for the other emotions. You can notice the movie always pairs her with sadness (and anger with fear) because they're complementative emotions rather than opposite emotions, and the acceptance of both is the key to emotional maturity.

I'm not going to go and complain about the way the movie handled things because it was fine for a kid's movie but I still think it doesn't paint sadness as necessary in anyway.
The bigger point was that you have to feel something or else your just depressed but at the end the biggest message I could get about sadness from the movie itself was "sadness is important because it shows other people you are upset". The fuck is that? That's not a reason to feel sad that's just a side effect of showing any emotion. Everything other emotion has a reason internally outside of sadness who is just thrown off at the end as "see her parents can see she's sad now things can get fixed".
I mean, I get it the entire thing's a metaphor. She's masking her sadness with joy and them leaving is her being depressed but if you have a memory and it's a "happy one" you're not trying to pretend to be happy you're fucking happy.
The kid is never lying to herself about being happy. We're never in some abused housewife territory of "I'm happy like this right haha I'm happy I swear I'm happy haha" she just has a positive outlook on a relatively shitty move for a kid.
The movie paints the only alternative to not feeling sad about a bad situation is to be clinically depressed and self destructive. There's nothing wrong with feeling sad and I'm glad the movie shows us this but by making Joy a cunt it tells us that "hey if you genuinely feel happy despite a bad series of events just watch out because maybe your bubble will pop and you'll go fucking crazy so you better cry" and that's a generally pointless thing to end on.

No, you should have realized sadness is not only about empathy, in fact all emotions can empath with other people's emotions too (whereas sadness empathy is arguably more important).
Sadness is more about healing/repair (sadness undid anger's ideia), cooperation/familiarization (empathy and altruism), and self-realization/resolve (Joy could only stop being self-absorved when she got sad and lonely).
Paying attention ot your life's problems and pain is very helpful sometimes, otherwise you would always lead on a numb empty unhappy life.
Also, consider being in joy isn't automatically equal to being happy, forcing the emotion "joy" while being in a unhappy mental state leads to madness or depression. Being sad while you're on a unhappy or troubled state is the natural solution.

Not only is it a story for kids, but it is a story about a kid. Emotional maturity and perspective come very late in life. She's not going to have a philosophical understanding of the complexity of emotional willpowers just because she goes through a personal crisis. It is a natural childhood response to attempt to push negative emotions out of their mind and try to force positivity for others' sake. This ends predictably as depicted in the movie and the revelation that emotions are not so simple and purpose-oriented but rather form a complex tapestry that isn't understood is a very appropriate transitional step in the unending development of a person.
The central metaphor of happy memories turning into sad memories is not about masking and denial (Joy preventing the transition, however, is); it is about the foundation of her life being upturned. The memories become sad in context (and memories are entirely contextual): happy memories about her friend only makes her remember that she is gone. I forget the origin of the quote, but I'm sure anyone who's gone through grief understands that there is nothing so horrible than being reminded of times of light when traveling through darkness.
The movie is a story about a person. It has morals, but it is not a guide-book. While the movie was seriously lacking in imagination with visual depictions of the mind, in terms of psychology I didn't see anything horribly haywire or shallow with it.
