Soos from Gravity Falls is Mexician, and is a fairly prominent character.
Fururama has Bender Bending Rodriguez and Roberto the robot.
There is going to be a netflix show called "Las Leyendas" next year about a boy from Mexico and his various supernatural friends (Spanish noble girl and knight, a Native American loli, and a creature that resembles a dragon trying to stop a bad guy from taking over the world.
It's based off a series of movies called La Leyenda de La Nahuala, La Leyenda de la Llorona, and La Leyenda de las Momias. They're kind of medicre to be honest, but I thought Teodora was a semen demon so I watched them anyways.
I recommend you try out a comic called All New Ghost Rider starring Robbie Reyes, a diligent young man who has to shoulder a lot of responsibility, because he and his younger brother were abandoned by his parents. He winds up being killed by accidently mucking into the affairs of a villain's henchmen, and gets possessed by an angry spirit so he can get vengeance on evildoers.
