I love TAS growing up. DCAU's og supes is probably my favorite Superman, if not one of my favorite super heroes in general. The only comics I've read were Doomsday and All Star, and I must admit to being disappointed with both. All Star > Doomsday for sure, but it was still pretty "okay," by my opinion. I read All Star because people seem to point to it as quintessential Superman, and Doomsday because I saw it on sale for $8 and thought, "it was chosen to be animated; surely it's good..."
What are other trades I should try? Collections are good too; if it's a classic/staple era/run.
Plus I kind of scorn All Star because anyone who wants to argue that Superman is OP will usually point to it and gloss over that whole thing about him being super-charged to the point that it was slowly killing him.

If you like the DCAU, you should check out the Superman Adventures books which are the comics put out to accompany TAS. I don't think it's in trades, however, but you can find it on a variety of sites for download.
There's a batch of collections of the Silver Age and Golden Age stories in a variety of way, some of the GA stuff is pretty different from TAS but not the SA stuff, so it really depends. Collected Editions blog spot is a good source for reviews of trades as is the Superman Homepage.

Superman and the LoSH is actually a great story and proof that, at one point in time, the Cereal King really had a good imagination and a way of bending and using the existing mythos with whatever current story he (and DC) wanted to tell, something he doesn't quite mange as well since around Blackest Night.

Is the character of Superman deminished by being an alien?
He's not a man at all, so how can he really represent the best a man can be? How can he inspire us to greatness?
What if he looked nothing like a human? It's really a pretty big coincidence that he does, when you look at the green lantern aliens and see that, aside from kryptonians, really no other aliens look remotely like humans.
If he looked like a giant bug would we still be able to look up to him as something to achieve?

That's a very Luthor way of thinking. That the origin of a being is the end all be all of their entire existence.
The message has always been "inspiration through action." A compassionate hand offered in a time of need, a shield in a time of danger, hope when there is nothing but darkness.
If a kind being sought to offer their incredible gifts to the entire species without need of payment or worship or servitude, could we as a species look past their outward appearance and focus only on the good that's there?
That's the real question, can we be more than we are and accept that good can come from anyone, anywhere, anytime, regardless?

It's hard for me to love the curren iteration of Superman... It just feels like they're trying to whittle out all the things that made him human, relatable, an at heart down to earth kinda guy who happens to become embroiled in cosmic level events.
