Ozai didn't get as much character development or spend as much time in the spotlight as Azula so its easier for people to say things like she should turn like Zuko did. Most people think Ozai as just a big bad evil guy while Azula had some underlying psychological issues we witness first hand.

So? A lot of people want more of crazy Azula, redemption Azula, more villain Azula, you can do a lot of things with her as a character. And the morals of a fictional characters doesn't make her/him more or less interesting. They can change if the story demands it.
The war is over and the mommy issues drove her crazy, now she can change, it is possible considreing her mom is alive, she doesn't fight anymore and her brother is in throne of her father. That would make a good story.

She had doubts. She utilized her quest for power in order to make herself be loved, because she thought that was the only way to measure a person's worth. Strength and power were the conditions of love.
The implication is that at the end of The Search, she runs away from Zuko because he showed her for the first time an unconditional love. It freaked her out because it contradicted everything she believed. Her whole existence was now meaningless, and she is techically now open to change. Who knows what Smoke and Shadows will do with this plot thread.
