To be fair, when TCW first started it was meant to fill in the timeskip in GenndyWars, not go all the way.
But then eventually they decided that it was going to go all the way through and past RotS.
But then George sold the company and the show was canceled.

His original origin was that his race was locked in a massive war with another species and were pretty much being wiped out. He came onto the scene and single-handedly turned the tides of the war. The jedi were late to notice and came into the picture when Grievous' enemies were getting slaughtered, so they helped them. By the end of it Grievous' peeps were in massive debt so he ended up offering his services to the trade federation in exchange for those debts. After working for them they decided to try and experiment with him and also make sure they owned him by sabotaging his ship, blowing him the fuck up, and convincing him to get a robot body to save him from the shame of being taken down outside of battle. They gave him cyborg body, fucked with his brain a bit, and offered him over to Sidious.
As far as I know his new backstory in the clone wars is just that he was a cool warrior that slowly got robotic enhancements or something.
