Windu makes a point in which is better for a Force sensitive to be taken away in order to become a Jedi at those times, it's harsh but understable

But that's the whole point. Luke had totally unorthodox training, disregarded Yoda and Ben's advice about his dad, and still managed to chart a course (through luck or the Force) that came through favorably.
Luke is SUPPOSED to be a testament to the fact that the old Jedi order had grown too arrogant, too ignorant, too stubborn, and too set in their ancient, rigid ways to consider possible alternatives.
It baffles me that I regularly see people that still somehow missed this.
