Know when to use a cast iron pan or anything that retains heat well.

This is important if you don't want to steam and "release the juices" and boil your food. Let's say you want to cook slice beef or even shrimp. In a normal non-stick pan, the juices will be released into the pan and you have a little soup that will take forever to evaporate and overcook your meat. In cast iron skillet, it sizzles and any liquid is evaporated real fast.
