Does anyone on /ck/ have experience of cooking these bastards?
They are a nuisance and I plan on hunting them this summer to lower their numbers.
Would rather use the meat for sustenance rather than just tossing them in the bin.

I do, but if you want to disregard conventional wisdom and eat diseased animals whose whole diet is literal garbage, then I whole-heartedly encourage you to keep eating seagulls, preferably until death is achieved.
