I know the term gets thrown around a lot, but is this genuine 'meme' level cooking apparatus or is there something good behind it?

Eh. There's some merit to using a block of salt for various purposes. Most of the "reasons" to use himalayan pink salt in particular are a meme, but for this application it at least provides some nice aesthetics.
