Those are both basic, easy risotto recipes. Another that I like to make in the spring and summer is Risotto with Herbs, which if you take the Champagne Risotto recipe, and replace the champagne with white wine, and then at the end stir in a mix of chopped herbs (I like using parsley, thyme, basil, chives, and a little tarragon, but you can use any combination you like).
