How does /ck/ cook their chips?

I'm trying to cook them so they're light and fluffy but I'm not sure how to do it.

if you mean from scratch, here's my recipe...

peel, wash, and cut to uniform batons. fry fully submerged for 5 minutes @ 300F , pull out, salt, then put on a sheet pan. Freeze these. then refry them @ 350 degrees fully submerged until theyre done. season when you pull em out

OP, you have to cook them twice (from raw potato, the frozen ones from supermarket are already cooked once), like >>7772156
There is a debate about the type of potato, washing them or not (depends on starch), and you can skip the freezer if you want.
