The nightlife is Tijuana is one of the best in Mexico, so if that's your thing, go to la sexta. Tijuana's beer scene is horribly underrated as well, so drink a lot of local beer until you lose your sense of smell ( don't forget the mezcal bar as well)

btw thats a quesadilla. in puebla/mexico city it is usually made with a blue corn torta and folded with a cheese filling and a guisado (stew), the usually guisados are corn smut, squash blossoms, chorizo, tinga, and stewed pork rinds.

pic related is a cemita. a torta with a sesame seed bun, meat of your choice( milanesa , lamb, cecina and pork in adobo being the typical), oaxacan cheese, papalo ( an herb that smells like skunk piss, avocado spread and a chipotle sauce.

I've only been to 3 places so far, a taco truck in Kensington, a restaurant in Flatbush, and a taqueria in Jackson Heights. They were all really good, but I'm not sure what would stand out to you.

I think your best bet for stand out kind of stuff would be midrange restaurants. I hear Downtown Bakery in the East Village is really good, I want to try it when I gey a chance.

Have you ever seen Ratatouille? In the beginning there's this animation where he's talking about how cheese and grapes are perfectly fine on their own (iirc), but when you add them together there's like a flavor explosion and there's fireworks and shit on screen.

Real taquerias rarely sell lots of chicken tacos. If its a tj style taqueria it will be adobada and asada. If it puebla it will be arabes and cesina. Df will be al pastor. Etc. i dont know of any great taqueria that sells chicken as their most popular protein. Asada is also a northern mexico and mexican american thing. Lots of taquerias in central mexico sell suadero instead of asada. Knowing what taco is the most consumed will lead you to what tacos to try.

I think Mexico has beef subsidies, so meat is cheaper in Tijuana than Chula Vista/San Diego. San Diego restaurants use flank/skirt because they're cheaper cuts, but a lot of taquerias in Tijuana use sirloin or NY strip because it's way cheaper. Last time I was down there, strip steak was about $4/lb.

Mexico city here. The food is absolutely great if you know how to recognize a good spot. There has to be people there; not throngs of yelp hipsters, but real people, like workers and such. The cooking oil should not look like it's been reused since Texas was Mexican, and it should be boiling lava hot before the dough goes in (the end result is less greasy that way). Also, the person in charge should, if female, be a nice lady who is at least 50 years old. Young bitches either can't cook, get distracted by their phones or look down on cooking because of muh modern womyn meme, and you can't do that with Mexican food. It needs love and respect for tradition.

Barbacoa is awesome, but it's a Saturday and Sunday thing, because that's when they make it fresh. Every time I have barbacoa on another day I'm disappointed. My advice to anon is to get carnitas, cecina and chorizo on Friday and then go out for barbacoa and a nice bowl of broth on Sunday morning (from one of these places that only set up shop on the weekends and only sell barbacoa). Yeah, restaurant scene in Mexico City is really booming right now, so many delicious shit. It's kind of a perfect storm: you have a country with a rich-as-fuck tradition, the culinary boom of the masses aided by Yelp, Foursquare, etc., and an absurdly mega-sized town full of people who genuinely love to eat.

But I was referring to street shops and low-level fondas in my original point; chefs are a whole other story.

I was in Cabo San Lucas a few years back and I went fishing with a mexican bro who brought some ceviche on the boat for me to try. The liquid part was red but also sort of sweet. Does anyone know the name of it or what made it sweet? Every time I go looking for ceviche recipes they're all mostly acidic but I want one that's got that mildly sweet taste to it. And no it wasn't corn or sweet potato it was the liquid.
