I used to work at a Japanese restaurant, and it was run by a Korean man. One day he was in back cooking (mostly my job), and I peeked over at what he had, and it was these little silkworm larvae, going in some soupy base with jalapeño slices and shit. Apparently he was making it for a customer he knew, and he offered me to try some of it. I'm willing to eat most things, but perturbed by bugs for the table, so I was really happy to try it since it seemed like it would be a really tasty preparation, and they looked like these nice crunchy little things.
Totally wrong. They were so soft with an almost malty texture (is that the right word)? Kind of just squishy, but with a bit of a gritty pasty inside, and they kind of flattened like there was some air in them. They also had almost none of the flavor fromwhat they were being cooked in. I hate to say it, but it's basically the only food I've ever been unable to finish my portion of. Clearly I thought too hard about the texture, but I had to refuse the rest and struggle to swallow that first one that I tried. It was a busy day for me, and so that bug was my sole source of energy. I could feel it giving me strength through the lunch rush.
