Can we have a central European food thread?

I want to start cooking more of this style of food and I'd like suggestions from people in the Czech Republic, Slovakia, Hungary, etc.

From what I've experienced the modern style is heavily influenced by the communist era, with lots of simple and hearty meals, but there are also a lot of dishes that were passed down through families from before the communist period.

When I was in Prague, I visited La Degustation, which has a menu based on Modernised version for Czech dishes from the 19th century.
It was very odd, but very enjoyable.

They're very tasty.
I visited a few Czech restaurants when I was on holiday and all the dumplings tastes different - probably different spices in each recipe.
Texture is great, especially when fried.

It is very similar in Bohemia and the western part of the country. As you move south and east it gets more similar to Hungarian/Polish. But food traditions travel around everywhere. It's all good stuff.

Speaking of which, what's /ck/ favorite commercially made pierogi?

I've tried Dudek brand potato, which are pretty good but not available at the two grocery stores I tend to shop at and Mrs.Kasia's, which were ok but I prefer Alexandra's brand, which are also the only brand to have blueberry pierogi.

There are two brands available in the NE Ohio area that I swear by: Janka and Sophie's Choice. They are available in most grocery stores here. They're not nationally available though.

Usually if you have a significant Polish community in your area, there's either a good Polish deli that sells pierogi or you can buy them at church bake sales. Mrs. T is okay in a pinch, but you have to think of them as a sort of "fast food" or "frozen pizza" version of the dish. It's nothing like the real thing.

Metro Detroit 'burbs here and I'm a Polack-Amercan and I do also get pirogi from the Polish Market but that's a separate further drive and I'm lazy, though they are good (but no blueberry, for some reason?). I'd get the Michigan made (via Kowalski's) Dudek brand, but I'd have to go to Meijer and I don't like shopping there; it's too big and there are too many (dumb) people shopping.

Aside from that this thread has made me so hungry. I don't think I've had anything posted aside from the schnitzel which is excellent. I've always wanted to try some real authentic goulash and other eastern yurop foods
