high heat applications imitation tastes better than extracts due to the flavor being stronger and extracts being alcohol based, if it isn't being heated very hot then the bean, paste or extract is better.
Vanilla goes well with everything. Ev-er-y-thing.
You need to add a lot to give dishes a pronounced vanilla flavor. Like when I make rice pudding I usually put in least a couple teaspoons.
Vanilla bean paste is probably the best way to impart vanilla flavor though, aside from actual vanilla beans of course.

Baking WHAT, nigger? Vanilla isn't something inherent to baking, but it might be called for in some desserts and stuff. If the recipe says to use it, use it. If not, don't.
I always use a recipe's recommended amount of Vanilla and then add half that amount of almond extract
