I'm gonna make some good brown gravy. Sausage gravy!

I have half packs of chorizo and hot breakfast sausage. I'm thinking of mixing them then frying. This is my first pack of chorizo and the first go was just breakfast burritos.

Think it will taste alright?

Not that guy, but since we are an amagamation of cultures, our sausage names usually come from the country of origin. For example, I can buy bangers made here, just down the street (and they call them bangers), along with bratwurst, bockwurst, black pudding, white pudding, keilbasa, etc. etc. etc......the list goes on. And then we do have some sausages that are indigenous to the US, like country sausage (which is what that other guy was trying to explain), Scrapple, Boudin, and Pork Roll to name a few. Country sausage is actually a descendant of British sausage, but it's changed so much in 200 years that it probably doesn't seem as similar now.

The fat to gravy ratio is 3.5 tablespoons of fat for every two cups liquid you want to thicken. I think thats WWJD(Julia child)

Add enough flour to give it a thick consistency, it will get thinner as it darkens

This is when you wisk your water and milk. 2/3 water, 1/3 milk ratio maybe 4 to 1. Wisk the water first then add milk and wisk like hell to break up that roux, and don't bother bringing your liquids to temp before, that shits played out
