I am participating in a cooking competition this weekend between 30 of my friends. We have to make a stew type of thing.
I took charge of my team since most of them only eat ramen noodles and ketchup on steak. Planning to do an idian coconut milk chicken curry.
The problem that I have though, is that there is hardly any vegetables in it and they demand vegetables.
Currently it only contains onions and a few red peppers.
I was thinking of adding some baby corns and baby marrows. I dont know if carrots will work at all.
Do any of you have an idea of what vegetables I should add?

These vegetables are commonly used in Singapore fish head curries.
Long beans, brinjal / egg plant, okra, cabbage, tomatoes, onions, pineapple and baby corn.
