Can't argue with your sensibilities, but I'd have split that into two dishes: a classic lentil salad with bacon, then a green salad with scallions and (with some fresh dill to put it over the top). But either way I'd pop a bottle of rosé because it's that time of the year.

Well, I'd say it isn't the strongest feta of all, its taste is softer than others I've tasted, and a (little) bit creamier.
That's probably why I put so much of it on my plates.
For example, pic related, while soaking in brine, is stronger and drier. I'd put certainly less of it.

in separate pan, cook down onions until soft, add garlic, cook more, add a shitload of curry powder, cook it into the onlons
dump that into the lentils
off heat, let them cool a little
