Is there any tortilla fan? I'd like to open a small restaurant where everything will be in tortilla and I'm looking for the best variants of dishes like burrite etc.

Have you been to Mil Jugos and had their cachapas or the chilaquiles at Anepalco's? Both about $10 a plate but fucking delicious.

Gabbi's in Orange is also solid Mexican (Mil Jugos is technically Venezuelan but it's in dtsa so who cares?)

Pupusas and arepas seem to be kind of trendy these days. You could consider hiring a Colombian, Venezuelan, or Salvadoran chef. Pupusas are amazing, I like the thick-style tortilla. And you can put fucking anything in an arepa.

I've never had arepas but if you've ever had handmade tortillas you'll notice that pupusas are just that but with a filling.

Traditional gorditas taste very similar to pupusas. Hand-formed, thick corn tortilla cooked on a comal, topped with whatever. I like refried beans with chile con huevo.
