Depending on dialect, it's pronounced either Rii-zoht-toh or Rii-soht-toh. Since most languages lack gemination (IE distinct pronunciation of a doubled consonant so as the two Ts in 'risotto'), it's as silly to fault foreigners for pronouncing 'risotto' without gemination as it is them to fault us for our tendency to put vowel sounds on the ends of foreign words or generally being unable to pronounce the letter H (for example, 'Hitler' becomes 'Itler' to an Italian speaker).
And many English speakers, especially Americans, lack the ability to roll Rs just as we generally lack the ability to pronounce the unrolled one they tend to use.
If Gordon Ramsey pronounces it "Ri-Zo-Toe", then so will I.
