Pretty much this. It's technically-digestible cement/spackle.
Great for the construction of complicated cake structure, but no aspect of its flavor is appealing. It tastes like sugary play-doh

Most of the time I've had it, it tastes chewy and sugary as fuck. But a couple times the texture isn't as strong, and if it's flavored then it's edible. But I would always much rather have a cake without it.

Shellac is edible. Why not just spray it on circus peanuts, save you some trouble. As for art, using varying mediums is not unusual and using one that is technically edible has appeal to me, but I don't get hung up about it like a 6yr old would because I didn't get to eat a piece of it. Same thing with porno mags... The subject is still arousing even though i will only get to fuck the paper version.

if I see fondant I automatically assume the baker is either lazy or totally ignorant these days. Also, its a guarantee the cake is probably going to taste like ass

Buttercream is god tier if made correctly. Beating butter and sugar togther is what most do and thats the overly sweet stuff that you generally get on cakes.
Proper buttercream takes abit more time amd skill, but it will make a topping that is better than the cake itself.

Factory made fondant is shit. That is what pretty much every business uses, so it is most likely what you have been exposed to.

Her homemade marshmallow stuff is pretty good, but even then, she only uses it on cakes where it is a must for the crazy design or a specific visual effect.
