It was my birthday yesterday, so I figured I'd treat myself to a rib eye dinner. Ready to cook /ck/? Nothing special, just a mid-week steak...
I seasoned with s&p and a little garlic powder, heated up the cast iron til' smoking hot, added a little oil, and started the party...I cooked them for about two minutes per side, once I knew I had a good crust.

Yeah, I still feel I can whip up a damn good steak despite. You're cooking on cast iron so fuck it, just don't overcook it.
For the sake of conversation, does anyone buy cheap ass cuts and essentially cook em the same way? I often buy western rib and give them a nice sear and they often taste just as good.
...And, I baked a tater, and steamed some broccoli tips. I would have preferred to roast the veggies but, I had too much going with the oven.

I don't buy cheap cuts with steaks when cooking them in my broiler oven or pan. I do buy cheap cuts when making stews or pulled pork in my pressure cooker though, tenderizes the meat and even the shittiest cheapest tough cuts soften up.
I had to turn off the flash in order for my phone to pick up the final doneness of the meat. so the picture kind of sucks, but you can at least see how well it came out...

A bad steak at rare is still a bad steak. A good steak at medium is still a good steak.
Temperature is only part of the equation.
