Hej,
I was preparing panir the other day and took some pictures.

It's pretty easy all you need is milk and some yoghurt and some icecubes.

Cook the milk, take from the heat and add some yoghurt. Stirr until the milk curls.

When it Starts curling add some icecubes to cool it down a little and to speed the process. After that empty your pot into a towel, let it hang for a couple of minutes and then press it.

After about an hour of pressing.
I realize my kitchen looked like shit that day.

For the actual dish i used minced onions, minced garlic and ginger and minced cashewnuts

But I'm wondering why you used yogurt as an acid instead of something simpler like citric acid or vinegar

I'm german actually but thanks for the input fuckface.

Fried the onions and the garlic/ginger. Then added the nuts.

The spice Mix is some Standard stuff prepared by the grandmother of an indian coworker. Should have asked whats actually inside

It's supposed to make it softer. I was going to use lemonjuice at first but my coworker told me to use yoghurt.

The next time i Plan to use lemons to See the difference.

Added the tomatos, Lots of curcuma and some cream.
Then add the cheese and we're done.

The second dish was lamb and spinach. Basicly the same Base of minced onions, garlic and ginger but then added lamb which was prepared in a pressurecooker before and spinach. Serve with rice.

We used two liters of Milk which should be enough for three people.
