Does it have any of the properties of wheat flour? The protein isn't gluten and I doubt it has any starch, so I can't imagine using it for anything that I'd use flour for. They should call it something else.

No I wouldn't use cricket flour unless it was very cheap but even then it's questionable.
It's actually a "protein powder" and should be compared to other protein powders with respect to nutrition and price. Here is a comparison:
. Cricket flour seems to come in at more than $10/lb and it has 70% protein of which only 20% are the essential amino acids.
. Whey concentrate protein powder as an example it costs around $4/lb when bought in bulk. It has 80% protein of which 40% are the essential amino acids.
