next time blanch everything for a few minutes before frying

if you cut the carrots smaller (grate or finely chop) you won't have to tho I would rather just blanch then fry bigger pieces

usually 3-5 minutes (test with fork)

you want them slightly softened, not breaking apart or too easy to pierce but not hard
