Heat up half a cup of milk to boiling point and then pour it while stirring into 3 yolks. Add a half cup of sugar, 3tbsp of cocoa powder and two tbsp of cornstarch and return to heat to boiling point again. When cooked into a custard, let it cool, you can add some coffe or chocolate liquor if you want.

Beat 3 egg whites to soft peak, add two tbsp of sugar and beat to stiff peaks. Fold into the chocolate custard and pour into buttered and sugar dusted ramekins.

Bake at 400f for 20 minutes or until risen and set.
