I like 'em a few different ways:
1) Marinade in rice wine or mirin or sake for a while, then skewer and grill 'em.
2) Mince them and use as part of the cajun dish "dirty rice"; they're cooked along with chicken liver, onions, green peppers, and celery, then mixed with rice and seasoned.
3) If I'm feeling fancy, mince them then fry them up with onion and herbs. Let cool, mix in a little beaten egg, and then stuff mushroom caps with the chicken heart mixture. Panko bread crumbs over the chicken meat side of the mushroom, then finish by deep frying.

I suppose they're a bit like chicken gizzards, if you've had those. They don't taste the same, but they're similar in the sense it tastes like chicken meat with a bit of an aftertaste and different texture. Much less crunchy than gizzards, though. Your best bet is to find a yakitori place or Brazilian steakhouse.
