Aight fu/ck/ers. I have pancetta and mushroom leftover from the chicken Marsala I made the other day. What's a good way to use the rest of it up?

I punched it into google and all I got was risotto. Never made risotto before but what should go with that?

I also have some nice Gouda I was thinking about saving for cheese dip but if anyone can find a use for that, I'm down to do it.

Saute the pancetta until desired consistency.
Saute the shrooms in the pancetta fat.
Make a bechemel sauce.
Add the sauted pancetta and shrooms.
Serve over rice.
