How do they get a slice to match up to your ideal dimensions?
i've seen a few restaurants use these.
the overwhelming majority of restaurants just eyeball the pizza.

I agree. The only time I could see this being useful (I went to college for finance so this is the number crunching side of me kicking in) is to make sure every single pizza was sliced so I could make sure I knew the exact cost for each individual pizza to do my books.
That being said, who needs that? Slice through the middle, turn, slice the middle, turn, slice the middle of one of the cuts, turn, slice the middle of the other cut. Done.

I was forced to use one of these when I worked at Domino's Pizza.
I made the school lunch pizzas and if the slices on each pizza were not evenly cut they would throw a bitch fit to the district manager who would then take it out on us.

I use a katana I had made for me in japan to cut my pizza, the blade is long enough that it makes it easy and it's sharper than any other blade so it cuts better

I use kitchen sheers at home, for thin pizzas. Good pizzerias around where I live just eyeball it using a rotary cutter. If my cooked pizza were sitting on a cutting board I'd do that too, but I tend to have it on whatever it was cooked on, so sheers are a good alternative.
