Take out the steak, salt it HEAVILY, and let it rest on some paper towels
Peel some taters and put them to boil
>>7394683
you mean potatoes?
Cut some onions as fine as humanly possible and put them in a pan over low heat with some butter and salt
>>7394687
Obviously. What does the image look like to you?
Fast forward 50 minutes. Put that shit in the freezer to get cold fast
Chop a bunch of garlic as fine as possible
>>7394700
And parsley save those stems in the freezer for stock!!
Cut up a bunch of broccoli
Whip up that room temperature butter
Salt the steak and leave it for fifty minutes?
>meat
disgusting
>>7394708
this is a little off track but, why don't more people like broccoli stems? I think they're wonderful
Sauté that garlic in some butter and olive oil until fragrant.
>>7394708
Peel the stems on your florets, it makes them much more appetizing.
>>7394715
Yes
Add it to the onions and throw it back into the freezer
>>7394719
Because they don't peel them and chop them up. I enjoy them immensely.
Once cooled mix it into your butter
Put the butter on some parchment paper
>>7394740
>muh compound butter
that's taking things a bit far unless you're making a large batch to freeze and have on hand
Roll that bitch up tight and throw it in the feeezer
>>7394754
Are you rolling a joint out of food?
>>7394750
That is exactly what I'm doing
Whip up that mash.
Salt pepper butter and cream.
A shit load of butter. The secret to a great mash is to keep adding butter until you feel dirty and guilty then add more butter
Delicious mash.
Also chop some mushrooms.
Gonna go take a shit and a shower and I'll be right back with the rest!
>>7394774
>The secret to a great mash is to keep adding butter until you feel dirty and guilty then add more butter
damn right it is
>>7394683
>peel
Oh god.
I am monitoring this thread.
Lurking hard. OP make sure you give us a shot of the interior of that steak ao we can see how badly you fuck it uo
Smash a couple garlics
Toast in some olive oil and butter
Toss in garlic infused fat
Put it back in the fridge for a week.
Roast in toaster oven
Cut up that beautiful compound butter
Cook that bitch
Drop some tiny ass scallops in a hot pan
Flip and drop a couple tablespoons of that compound butter in the pan
The absolute madman actually knows what he's doing. Great thread OP.
Drop some shrooms in the pan after you take the steak out. Sauté that up real good. Then add a tablespoon of butter and a couple rosemary sprigs and some flour. (Roux)
Deglaze with some stock and the steak juices
The steak!!!
The finished plate
Served two
>>7394960
bravo, op. hope that effort got you laid.
i know i, for one, have a boner
Hope you guys enjoyed!! The compound butter was delicious. I was afraid i had added too much lemon juice and not enough garlic but that lemonyness was absolutely perfect with the scallops, and surprisingly delicious with the steak.
I was very happy with the rosemary and mushroom sauce i made with the drippings. It was very beefy and the mushrooms were beautifully caramelized and the Rosemary came through strong and added a really great herbaceous freshness to the whole dish.
The steak was cooked very rare as you can see. I still haven't learned a way to get the meat around the bone in a porterhouse cooked without overcooking the steak. Although I enjoyed the steak, the meat around the bone was a bit too rare for me. The steak, however, was very juicy and incredibly tender, $12 well spent.
>>7394680
Roasting broccoli is literally the best way to prepare it.
Looks fukin good, OP.
>>7394960
you beautiful bastard
Will now start deglazing my mushrooms when I cook steak.
10 out of ten.
Finally, someone that actually knows what they're doing and isn't a total twat about it. You and houstonbro are the only saving grace to a board that has become complete shit. Well done, OP
>>7395015
thats because youre not supposed to pan fry a t bone
you pan fry new york strip
it wasn't "very rare" it was undercooked
something was really odd about the steak's texture and color
look up gordan ramsey's youtube video on pan frying new york strip
also, you overdid it, too much shit ontop of your plate too many steps, instead of letting steak be steak you put some cream shit ontop of it and 50 layers of flavoring rather than just enjoy the flavor of the steak with some salt and pepper
i would have made a baked potato with sour cream and diced green onions with the new york strip
you're just like overcompensating
>>7394680
>taters
i like your dialect and your thread
>>7395179
it's friday night
this nigga decided to make a retardedly gluttonous meal because his workweek sucked
probably drank a bottle of wine while he did it and proceeded to get laid
and the only thing you can manage to do is say his plate is too full for your bitch belly and direct him toward a gordon fucking ramsey video?
>>7395179
>there is one and only one correct way to enjoy steak
>>7395203
a video that teaches him how to cook steak properly with very essential tips if he wants to learn how to do it proper and not be complete shit , yeah
and some kid who is so lonely he needs to make a picture diary of him cooking a bad meal on 4chan of all places, is not going to be getting laid on a friday night
>>7395253
Op here. I totally got laid, loser.
>>7395280
Negative nancy BTFO
>>7395253
you know, being a well-adjusted adult doesn't actually mean going out to a club on friday night to try and bag some whore and trick her into sleeping with you. it took him 3 hours to get all of his pictures posted. he could've been doing anything in that time. nigga made two plates.
and pan-searing is a perfectly cromulent method of preparing a t-bone. maybe he wasted like 2oz of meat. who cares, the steak he *chose* to eat was cooked perfectly.
>season
>olive oil, in
>steak, in
>baste
>oven
>done
fuck off with that shit. dude obviously doesn't need a goddamn gordon ramsey tutorial. he made a fucking bulk compound butter and a roux for a simple steak. i'm going to go out on a limb and assume that he cooks better and more often than you.
>>7395179
>i would have made a baked potato with sour cream and diced green onions with the new york strip
Nobody asked and nobody gives a shit
>>7395179
What a shitty post.
Nice work OP!
>>7395280
Atta boy OP!
Anyone ever had steak and sketti?
>>7395179
>Don't make an actual dish out of that meat, just eat it completely plain and raw, you're wrong if you don't!
I wouldn't want the compound butter on my steak either, but I respect the decision to put it on.
>>7395179
Eexcellent bait. Don't fill up on (You), you'll spoil your dinner.
>>7394716
I love this board
Hey question regarding searing meat
When cooking a steak it's like 2-3 minutes I know because I like mine medium rare
But if I was cooking pork chops in a similar fashion, how long should I cook it? What amount of doneness do you guys like? Also, what is a good way to cook pork chops?
nice
>>7394744
Why is the butter white?
>>7396271
It's whipped
>>7394774
Aw yiss. I've seen Blumenthal suggest using literally 50:50 potato to butter.
Tres Bien
>>7395179
>>7396272
Or is it nae naed
>>7394912
You could just drizzle them in olive oil, season and microwave them for 4 minutes. They will be just as good.
>>7396727
Then you don't get any crispy bits. Roasting is definitely the best method.
>>7394960
Fucking nice. Makes me want to get out of bed and get something to eat.

Now THIS is the /ck/ I knew and loved. camaraderie and support. Know-how, and open minds for those without.
Not the butt-hurt, muh-meme muh 'cha'za'sta'chup /ck/ that regularly falls apart at the seams.
This thread proves there is still hope for this board. We owe 'ya OP.
>>7395177
Eh, there's a few people here who ain't that bad. Some of the sushi I've seen here looked alright, plus there was that faggot with the giant knife a few weeks back did something OK with fish. Main problem is the ratio of good cooks to shit fast food plebs is way off. I mean, keep the fast food threads, fine, but some more actual op would be great.
Nice thread OP, think imma make some compound butter later, i been trying to chill out on steak but im craving it now
>>7394960
WA LA!
But really, would eat.
