Smoking and grilling thread
Got a Boston butt soaking in marmalade and apple cider vinegar for tomorrow. Gonna put it on with some wild cherry wood for about 10 hours.

Anyone else tried smoking fish or shellfish? at the restaurant i work at, we smoked scallops on cedar and hickory. they turned out surprisingly good. we smoked them for roughly ten minutes, and quickly seared them.

I do brown mullet wrapped in tin foil over pecan. The skin just peels right off with the foil

At my family's smokehouse we put some salmon down on a piece of foil then put a bit of honey, red onion, and pork rub on top. Smoke it at 270 until its 145, comes out so cash. (especially if you can get the sugars around the edges to caramelize)

for fish get a plank of untreated wood to cook on, plenty of choices in fancy woods.
i normally smoke butts or ribs
