I didn't know shallots were a thing until I was in high school and that's only because my mother bought a bag of them, and then never ate them. I always got the terms mixed up until last St. Patricks day when I tried to make champ and had to google it.

I didn't realize there were people who had a problem with vegetarians and vegans until I was in my late 20s.

I've never thought about it before, but what would happen if you thinly sliced a bunch of onions, salted them, and basically just did everything else you'd do to make sauerkraut?

I don't see any reason why it wouldn't work the same as cabbage (though they'd probably turn to mush).

Are fermented onions a thing somewhere?

You can ferment any vegetable. It's a good way to reduce the sugar content of roots. I'm not aware of there being a special name for any type of fermented onion.

This was pretty recent for me too. Only found out because I was reading about how there was some area in Russia that had a large Korean diaspora, and they used carrots as the base veg instead of cabbage.

You can't ferment every vegetable into something edible.
Different vegetables, different bacterial flora, different products of fermentation. There are several ways of pickling cucumbers. Milk (ok, not vegetable, but...) can be fermented into yogurt, kefir, soured milk, and a number of cheeses, all differing with bacterial flora.

OTOH some vegetables can only rot, not having any bacteria that can process them into something edible. I'm fairly sure cucumber, carrot and tomato are examples of these.
