they overcook as not to make someone sick, so I order rare. Honestly I never send it back for being overdone. If i'm eating a steak, it's a status thing, the bloodier the better.
If I am going to actually enjoy my steak I drench it in soy sauce, fight me.

As a younger man I used to get medium rare or rare mostly, thought it made me look tough I guess. Settled on medium years ago, perfect balance of texture, blood and heat.
