help /ck/, i need a good sauce for Duck Breast. Looking for something dark and smooth. Not Orange or Red Wine.
The duck breast will be served with Fondant potatoes if that matters.

Tamarind or pomegranite
90% of the time I buy duck breast, it's leathery and disgusting, from an old animal.

I do a honey glazed duck breast and use the fat and honey to make a pan glaze
Best duck I ever had was in France with a green peppercorn sauce. Never tried making one but it can't be too hard.

Beetroot + Carrot sauce is a godly combo for duck
