Douglas Baldwin kind of kick started low temp cooking in the home setting. Comes off a bit wooden if you watch his videos, but he has great safety temps.

My favorite thing to cook sous vide is 30 minute salmon @ 45C/113F.
Blanch it by pouring boiling water over it because it won't even get close to being sterile in the bag.

I was watching a WD-40 documentary. I guess he worked with them in creating "devices" that would create some of their products.
