Yerba Mate and General Tea thread.

I have come into an opportunity to start a tea farm for a variety of plants. The main crop is Yerba Mate. I've done a lot of research but have a few questions left unanswered. I'm waiting on call backs from other distributors and manufacturers but was curious to know if anyone here could help me out faster. I'm intermediate when it comes to tea but I've always wanted to do this and I'm considering heavily this change in my life.

Here are my questions:
1) How many ounces can you harvest from a tree per month and year?
2) How often can you harvest?
3) What is the best way to process the leaves without destroying its nutritional benefits?

I've figured out most else. Any help would be appreciated.
