Hello friends
I need dish ideas that will happily cool and reheat a day or two later.
I'm a student and generally only cook for myself so most of the time I cook about three day's worth at once, but I've been running out of ideas recently.
Chilli, beef stews, bolognese, various soups, tomato-based curries - I'm getting bored of these.
How can I mix it up?

Do you want stuff you can just stick in the microwave, or do you mind doing additional cooking with the leftovers?
Chinese meals you can turn into fried rice. Any cooked meat like from a roast you can put into pasta, pies, soups, stir fries, salads and omelettes. The vegetables too usually, or you can fry them in a hash.
Arroz con Pollo
Indian spiced rice casserole
Coucous spiced pork loins
Spaghetti squash with sauce if your choice
Those are currently on my heavy rotation list.

I've yet to have leftovers that didn't reheat okay. As long as it isn't large chunks of solid meat, it's perfectly fine.
I bought some of these this week. Cooked them all on Sunday, along with a whole thing of rice, and some vegetables. I had it Monday, Wednesday, plan to have it tomorrow too. The stuffing helps it stay moist.
