Dunno what you would call this but I love it for lunch;
slice the aubergine in half through the width then length ways, each half should make 5 thinnish slices. Put olive oil on both sides of each slice, I always like a fuck load on but might be too greasy for some people.
Put under the grill, I use medium setting, turn when one side gets a nice charring level so that both sides are charred. When you put the slices under, put about 4 little tomatoes under as well. Once the slices are cooked, take out the tomatoes and slice up some buffalo mozerella, so that each aubergine slice has some cheese on it, put back under the grill for like a minute or till the mozerrella starts to melt slightly then take out, put it all on a plate with the tomatoes and eat it.
I know buffalo isnt supposed to be cooked but you only want it slightly melty and cow mozzarella tastes disgusting imo, its not creamy or sweet.
Aubergine is essential to moussaka, another dish I love.

Any other way to prepare it I find too oily or high calorie. Although freshly breaded, fried, and topped with spoons of marinara is great once in a while.
