Its lean as fuck so needs carefull cooking and more flavour added than fatty cuts.
I marinade strips in soy/chillis/ginger/honey/rice win for a couple days then stiry fry. Use it in a salad or wraps with nuoc cham, cilantro, bean shoots etc
