For a couple "cream of ____" type soups I make i'll juice half a lemon and pour that in at the end. makes a nice counterpoint to the sweet creaminess that the, well, cream adds. (actually been using coconut cream instead of dairy alot recently, shit's pretty tasty and also cheaper)
